One of the Wine & Food Festival’s most popular chefs is returning to help us celebrate our 25th anniversary û Chef Bernard Guillas. Chef Bernard began his formal training in France where he apprenticed with the legendary Georges Paineau. Jumping continents, he was sous chef under Pierre Chambrin, former White House executive chef. Chef Bernard became the executive chef of La Jolla Beach & Tennis Club in 1994.
Chef Bernard has two cookbooks to his credit – Award winning Flying Pans with chef de cuisine of the Marine Room, Ron Oliver, and Two Chefs One Catch. He has been a guest on many television and radio programs and has been a guest chef multiple times at the famed James Beard House in New York. He has been named Chef Magazine’s Chef of the Year and San Diego’s Best Chef numerous times.

Executive Chef Amy Smith returns to the Wine & Food Festival to help celebrate its 25th anniversary! Chef Amy is known for her fun-loving personality and incredible Montana cuisine.
Chef Amy, a native of Toledo, Ohio, has been at The Grand Hotel since 1989. Since her arrival, The Grand Hotel has become one of Montana’s premier dining destinations and has been a Wine Spectator award winner since 1993. Chef Amy’s culinary talents have been enjoyed by celebrities, politicians, winemakers and world travelers.

Participants will enjoy an evening with Colin McKenney of Deschutes Brewery in Bend, Oregon. With the growing popularity of craft beers, this seminar will give beer lovers the opportunity to learn from Colin McKenney, sample their beers and learn the characteristics that make the beers unique. Beer and food pairing will be a part of this class.
Deschutes Brewing Company was founded in 1988 as a brew pub. Today, they ship to 28 states and the District of Columbia and around the world from its main brewing facility located on the banks of the Deschutes River.

Executive Chef Eric Gruber joined Lone Mountain Ranch in July 2016. His philosophy of bringing local flavors and produce together in inventive yet approachable dishes, his deep knowledge of five-star hospitality, and his love for the culture of the great American West are the perfect elements for creating extraordinary, authentic guest experiences.
Chef Eric holds a degree in Culinary Arts from Scottsdale Culinary Institute and was executive chef at the W Hotel in San Diego, California, Shore Lodge and the Whitetail Club in McCall, Idaho before joining the team at Lone Mountain Ranch.

Featuring Chef Raghavan Iyer and Chef James Dodge with wine tips from Certified Wine Professional Stella Fong.
Two exciting and accomplished chefs, Raghavan Iyer and James Dodge return to Billings to celebrate our 25th anniversary! Super popular at past festivals, these two experts will dazzle all participants as they demonstrate how to prepare a star-studded menu. Stella Fong will provide tips to pair the perfect wines with their creations.
Raghavan Iyer is a cookbook author, culinary educator, spokesperson, and consultant to numerous national and international clients. He is the author of several cookbooks, most recently Smashed, Mashed, Boiled and Baked – and Fried Too!
Jim Dodge has had a wide-ranging culinary career. After growing up in the hospitality industry, he trained as a chef, became a celebrated pastry chef, published several cookbooks, and then became a culinary educator and joined the food service industry. Since 2004, he has been Bon Appetit Management Company’s director of specialty culinary programs. Jim has published several cookbooks, including the award-winning American Baker and Baking with Jim Dodge.
Stella Fong, Certified Wine Professional, is also a wine and food educator and writer. Stella has been instrumental in the development and success of the Wine & Food Festival. Stella is the author of two books: Billings Food – The Flavorful Story of Montana’s Trailhead and Historic Restaurants of Billings.

Featuring Executive Chef Shawn Hamilton Smith of Bighorn River Lodge in Fort Smith, Montana.
Chef Shawn grew up in Easton, Connecticut where he started cooking at a young age. While attending the University of Utah, he realized that cooking was his passion. He then enrolled at the California Culinary Academy in San Francisco, California.
Upon graduation, he returned to Utah as chef de cuisine at Wild Grape Bistro and was later recruited to assist in the opening of the Michelin Starred Spruce restaurant in Park City, Utah. Following a stint in Bend, Oregon, Shawn’s love of the outdoors and fly-fishing led him to the Bighorn River Lodge in Fort Smith, where he has been for three seasons.
